SOUP

Gazpacho - classic Andalucian soup of tomatoes, onion, cucumber and peppers

Salmorejo - blended tomato, onion, sherry vinegar and bread soup from Cordoba, thicker than gazpacho and traditionally accompanied by chopped jamón serrano, chopped hard-boiled egg or bonito flakes, finely sliced fresh onion and green pepper

Sopa De Ajo- rustic Castilian  bread, garlic, egg, paprika and ham (optional) soup

 

CONDIMENTS

Romescu/Romesco  - Catalan toasted almond/hazelnut, skinned roasted red pepper, garlic, fried bread and olive oil sauce. Often eaten with fish or calçots and other grilled vegetables

Alioli – creamy garlic and oil sauce (egg optional)

 

MEATBALLS

Albondigas con salsa de tomate: beef, garlic and parsley meatballs in a tomato sauce

Albondigas con aceitunas: pork & beef meatballs, chilli & green olives

Albondigas con salsa de Jerez: pork, cooked ham and Serrano ham meatballs braised in a dry sherry sauce
